Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper. If using, lightly grease the parchment paper with coconut oil to prevent sticking.
In a large mixing bowl, combine the rolled oats, sesame seeds, chopped nuts, dried cranberries or raisins, and salt. Mix well to evenly distribute the dry ingredients.
In a small saucepan over low heat, combine the honey and peanut butter. Stir continuously until the mixture is melted and smooth, about 2-3 minutes. Remove from heat and stir in the vanilla extract.
Pour the honey-peanut butter mixture over the dry ingredients in the bowl. Use a spatula or wooden spoon to mix thoroughly, ensuring all the dry ingredients are evenly coated.

Once cooled, lift the bars out of the pan using the parchment paper. Place them on a cutting board and cut into 12 equal-sized bars.
Store the sesame oat bars in an airtight container for up to 1 week at room temperature, or up to 2 weeks in the refrigerator. You can also freeze them for longer storage.
