Ingredients

  • 12 oz Spaghetti or Chinese egg noodles
  • 3 tbsp Sesame oil
  • 0.25 cup Soy sauce
  • 2 tbsp Rice vinegar
  • 2 tbsp Peanut butter
  • 1 tbsp Honey or sugar
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 0.5 tsp Red pepper flakes
  • 8 oz Roast pork (char siu or leftover roasted pork), thinly sliced
  • 4 Scallions, thinly sliced
  • 2 tbsp Sesame seeds, toasted
  • 1 Cucumber, julienned or sliced (optional)
  • 1 Carrot, julienned (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or Chinese egg noodles according to the package instructions until al dente. Drain, rinse under cold water, and toss with 1 tablespoon of sesame oil to prevent sticking. Set aside.

Step 2

In a mixing bowl, whisk together the remaining 2 tablespoons of sesame oil, soy sauce, rice vinegar, peanut butter, honey (or sugar), minced garlic, grated ginger, and red pepper flakes until smooth and well combined.

Step 3

In a large mixing bowl, combine the cooked and cooled noodles with the sauce. Toss until the noodles are evenly coated.

Step 4

Add the sliced roast pork, scallions, and toasted sesame seeds to the noodles. Toss again to mix thoroughly.

Step 5

If desired, fold in the julienned cucumber and carrot for added crunch and freshness.

Step 6

Serve immediately at room temperature or chill in the refrigerator for 20 minutes before serving for a refreshing cold noodle dish.

Step 7

Garnish with additional sesame seeds or scallions, if desired, and enjoy!
