Ingredients

  • 8 oz spaghetti or lo mein noodles

  • 1 medium carrot, julienned
  • 2 green onions, thinly sliced
  • 2 tbsp toasted sesame oil
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 0.5 tsp red pepper flakes
  • 1 tbsp sesame seeds
  • 2 tbsp neutral oil (e.g., vegetable or canola)
  • 6 cups water (for boiling noodles)
  • 1 tsp salt (for boiling noodles)

Directions

Step 1

Bring 6 cups of water to a boil in a large pot. Add 1 tsp of salt and the noodles. Cook according to the package instructions until al dente. Drain, rinse with cold water, and set aside.

Step 2

While the noodles cook, prepare the sesame sauce. In a small bowl, combine the sesame oil, soy sauce, rice vinegar, honey, minced garlic, grated ginger, and red pepper flakes. Mix well and set aside.

Heat 2 tbsp of neutral oil in a large skillet or wok over medium heat. Add the julienned carrot and cook for 2 minutes until slightly softened.

Sprinkle the sesame seeds and sliced green onions on top. Toss lightly to combine.
