Ingredients

  • 120 grams All-purpose flour
  • 100 grams Granulated sugar
  • 85 grams Unsalted butter, softened
  • 1 large Egg
  • 1 tablespoon Lemon zest
  • 1 tablespoon Fresh lemon juice
  • 30 grams Sesame seeds
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg until fully incorporated, followed by the lemon zest, lemon juice, and vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Step 6

Gently fold in the sesame seeds, ensuring they are evenly distributed throughout the dough.

Step 7

Using a small spoon or cookie scoop, drop rounded teaspoons of dough onto the prepared baking sheets, spacing them about 5 cm (2 inches) apart to allow for spreading.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden brown but the centers are still soft.

Step 9

Remove the baking sheets from the oven and let the cookies cool for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 1 week. Serve and enjoy!
