Ingredients

  • 14 oz firm tofu
  • 1 lb asparagus
  • 3 tbsp sesame oil
  • 3 tbsp soy sauce
  • 1 tbsp ginger, grated
  • 2 garlic cloves, minced
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 2 tbsp water
  • 1 tbsp sesame seeds
  • 2 scallions, thinly sliced
  • 2 tbsp neutral cooking oil (e.g., vegetable oil)
  • 0.5 tsp salt

Directions

Step 1

Press the tofu to remove excess water. Wrap it in a clean kitchen towel and place a heavy object on top for about 10 minutes. Then cut the tofu into 1-inch cubes.

Step 2

Wash the asparagus and trim off the woody ends. Cut the asparagus into 2-inch pieces.

Step 3

In a small bowl, whisk together soy sauce, grated ginger, minced garlic, honey or maple syrup, rice vinegar, cornstarch, and water to create the sauce. Set aside.

Step 4

Heat 1 tablespoon of sesame oil and 2 tablespoons of neutral cooking oil in a large skillet or wok over medium-high heat.

Add the tofu cubes to the skillet and cook until all sides are golden brown and crispy, about 6-7 minutes. Remove the tofu from the skillet and set aside.
