Press the tofu to remove excess water. Wrap it in a clean kitchen towel and place a heavy object on top for about 10 minutes. Then cut the tofu into 1-inch cubes.
Wash the asparagus and trim off the woody ends. Cut the asparagus into 2-inch pieces.
In a small bowl, whisk together soy sauce, grated ginger, minced garlic, honey or maple syrup, rice vinegar, cornstarch, and water to create the sauce. Set aside.
Heat 1 tablespoon of sesame oil and 2 tablespoons of neutral cooking oil in a large skillet or wok over medium-high heat.
Add the tofu cubes to the skillet and cook until all sides are golden brown and crispy, about 6-7 minutes. Remove the tofu from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of sesame oil and toss in the asparagus. Sprinkle with a pinch of salt and stir-fry for 3-4 minutes, until the asparagus is tender but still crisp.
Return the tofu to the skillet and pour the sauce over the tofu and asparagus. Stir to coat everything evenly. Cook for 2-3 minutes, allowing the sauce to thicken.
Remove from heat and sprinkle with sesame seeds and sliced scallions.
Serve immediately over steamed rice or noodles for a complete meal.
