Ingredients

  • 250 grams Dried noodles (spaghetti, soba, or Chinese egg noodles)
  • 4 tablespoons Sesame paste or tahini
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1.5 tablespoons Sesame oil
  • 1 tablespoon Honey or sugar
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 4 tablespoons Water
  • 1 large Cucumber, julienned
  • 1 medium Carrot, julienned
  • 2 stalks Green onions, sliced thinly
  • 2 tablespoons Sesame seeds (for garnish)
  • 2 tablespoons Crushed peanuts (optional, for garnish)
  • 1 teaspoon Chili oil or red pepper flakes (optional, for spice)

Directions

Step 1

Cook the dried noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking. Set aside.

Step 2

In a medium mixing bowl, whisk together the sesame paste or tahini, soy sauce, rice vinegar, sesame oil, honey or sugar, minced garlic, grated ginger, and water until the sauce is smooth and creamy. Add more water, one tablespoon at a time, if a thinner consistency is desired.

Step 3

In a large bowl, toss the cooked and cooled noodles with the sesame sauce until evenly coated.

Step 4

Add the julienned cucumber and carrot to the noodles and gently toss to combine.

Step 5

Serve the noodles in individual bowls and top with sliced green onions, sesame seeds, and crushed peanuts if desired.

Step 6

For a spicy kick, drizzle with chili oil or sprinkle red pepper flakes before serving.

Step 7

Enjoy the Sesame Cold Noodles chilled or at room temperature!
