Ingredients

  • 1 pound chicken breast
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon fresh ginger
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 8 ounces snow peas
  • 1 tablespoon sesame seeds
  • 2 scallions
  • 1 cup water
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

Step 2

In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and 1 tablespoon of water to create a marinade.

Step 3

Add the chicken to the marinade, mix well, and set aside for 10 minutes.

Step 4

While the chicken marinates, prepare the sauce by mixing the remaining 1 tablespoon of soy sauce, honey, rice vinegar, toasted sesame oil, and 1/2 teaspoon of cornstarch in a small bowl.

Step 5

Finely mince the garlic and grate the ginger. Slice the scallions into thin rounds.

Step 6

Heat a large skillet or wok over medium-high heat and add 1 tablespoon of olive oil.

Step 7

Once the oil is hot, add the marinated chicken and cook for 5-7 minutes until golden and cooked through. Remove the chicken from the pan and set aside.

Step 8

In the same pan, add the remaining 1 tablespoon of olive oil along with the garlic and ginger. Sauté for about 30 seconds until fragrant.

Step 9

Add the snow peas to the pan and stir-fry for 2-3 minutes until they are bright green and slightly tender but still crisp.

Step 10

Return the cooked chicken to the pan and pour in the prepared sauce. Stir everything together and cook for 1-2 minutes until the sauce thickens and evenly coats the chicken and snow peas.

Step 11

Sprinkle sesame seeds and scallions on top before serving.

Step 12

Serve hot with steamed rice or noodles for a complete meal.
