Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 3 tbsp Soy sauce
  • 2 tbsp Honey
  • 2 tbsp Sesame oil
  • 1 tsp Fresh ginger (grated)
  • 2 cloves Garlic (minced)
  • 2 cups Uncooked jasmine rice
  • 2.5 cups Chicken broth
  • 1 cup Carrot (diced)
  • 0.5 cup Frozen peas
  • 1 tbsp Black sesame seeds (for garnish)
  • 2 stalks Green onions (sliced, for garnish)

Directions

Step 1

Cut the boneless, skinless chicken thighs into bite-sized pieces and set aside.

Step 2

In a small bowl, whisk together the soy sauce, honey, sesame oil, grated ginger, and minced garlic to create the marinade.

Step 3

Pour the marinade over the chicken pieces. Stir to coat evenly, then let the chicken marinate for 10 minutes while you prepare the other ingredients.

Rinse the jasmine rice under cold water until the water runs clear. Drain well.

In the rice cooker pot, add the rinsed jasmine rice, chicken broth, diced carrots, and the marinated chicken (along with all of the marinade). Stir gently to combine.
