Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 2 tablespoons sesame oil
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame seeds
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the brown rice under cold water to remove excess starch.

Step 2

In a medium saucepan, add 2 cups of water and the rinsed brown rice. Bring to a boil over medium-high heat.

Step 3

Reduce the heat to low, cover the saucepan, and simmer for 30-35 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it rest, covered, for 5 minutes.

While the rice is cooking, heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat.
