Ingredients

  • 1 cup All-purpose flour
  • 1.5 teaspoons Baking powder
  • 2 tablespoons Granulated sugar
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.75 cup Milk
  • 2 tablespoons Unsalted butter (melted)
  • 1 medium Apple (grated)
  • 2 tablespoons Sesame seeds
  • 1 as needed Vegetable oil or butter (for cooking)
  • 1 as desired Maple syrup or honey (optional for serving)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt.

Step 2

In a separate bowl, beat the egg and then whisk in the milk and melted butter until well combined.

Step 3

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix; it's okay if there are a few lumps.

Step 4

Add the grated apple to the batter and fold it in gently.

Step 5

In a dry skillet, toast the sesame seeds over medium heat until golden and aromatic, about 2-3 minutes. Set aside a small pinch for garnish, and mix the rest into the pikelet batter.

Step 6

Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil or butter.

Step 7

Spoon heaping tablespoons of the batter onto the skillet to form small pikelets, leaving space between each for spreading.

Step 8

Cook for about 2-3 minutes, or until bubbles appear on the surface and the edges look set. Flip the pikelets and cook for another 1-2 minutes, or until golden brown and cooked through.

Step 9

Transfer the cooked pikelets to a plate and repeat with the remaining batter, greasing the skillet as needed between batches.

Step 10

Serve warm, drizzled with maple syrup or honey if desired. Sprinkle the reserved toasted sesame seeds on top for a finishing touch.
