Ingredients

  • 1 lb Pork tenderloin
  • 4 slices Serrano ham
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 tbsp Fresh rosemary, chopped
  • 1 tsp Lemon zest
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup White wine (dry)
  • 0.25 cup Chicken stock

Directions

Step 1

Trim any excess fat or silver skin from the pork tenderloin, and pat it dry with paper towels.

Step 2

In a small bowl, combine minced garlic, chopped rosemary, lemon zest, paprika, salt, and black pepper. Rub this mixture evenly over the pork tenderloin.

Step 3

Wrap the pork tenderloin with the Serrano ham slices, ensuring they overlap slightly to cover the pork fully. You can secure the ham with kitchen twine or toothpicks if necessary.

Step 4

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

Once the pork is seared, transfer the skillet to the oven. Roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 7

While the pork is roasting, make the pan sauce. In another small saucepan, heat 1 tablespoon of olive oil over medium heat. Add any leftover garlic and rosemary from the rub, and sauté until fragrant, about 1 minute.

Step 8

Deglaze the pan with white wine, scraping up any browned bits. Let the wine simmer for 2-3 minutes to reduce slightly, then add the chicken stock. Simmer for another 5 minutes, stirring occasionally, until the sauce thickens slightly.

Step 9

Remove the pork from the oven and let it rest for 5-7 minutes. Slice the pork into medallions and drizzle the pan sauce over the top before serving.

Step 10

Serve Serrano Pork with your choice of side dishes, such as roasted vegetables or mashed potatoes. Enjoy!
