Ingredients

  • 10 whole Serrano peppers
  • 4 whole Garlic cloves
  • 2 tablespoons Olive oil
  • 1 tablespoon White vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoons Sugar
  • 2 tablespoons Water

Directions

Step 1

Wash the Serrano peppers thoroughly under running water and pat them dry with a clean kitchen towel.

Step 2

Trim the stems off the Serrano peppers, leaving the seeds intact for maximum heat. If you prefer a milder paste, remove the seeds.

Step 3

Peel the garlic cloves and set them aside.

Step 4

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Step 5

Add the Serrano peppers and garlic cloves to the skillet and sauté for 5-6 minutes, stirring frequently, until the peppers are slightly blistered and the garlic is golden but not burned.

Step 6

Transfer the sautéed peppers and garlic to a blender or food processor.

Step 7

Add the remaining olive oil, white vinegar, salt, sugar, and water to the blender.

Step 8

Blend on high speed until the mixture forms a smooth, thick paste. Scrape down the sides of the blender as needed to ensure all the ingredients are well combined.

Step 9

Taste the paste and adjust seasoning if necessary. You can add more salt, vinegar, or a splash of water to achieve the desired balance and consistency.

Step 10

Transfer the Serrano paste to a sterilized glass jar or airtight container. Let it cool completely before sealing.

Step 11

Store the paste in the refrigerator for up to 2 weeks and use as needed to add a spicy kick to your dishes.
