Ingredients

  • 16 pieces Large button mushrooms
  • 4 oz Cream cheese, softened
  • 0.5 cup Shredded parmesan cheese
  • 0.33 cup Breadcrumbs
  • 2 tbsp Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 tsp Paprika (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

Clean the mushrooms with a damp paper towel and gently remove the stems. Set the caps aside and finely chop the stems.

Step 3

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems and minced garlic. Sauté for 3-4 minutes until the stems are softened and the garlic is fragrant. Remove the skillet from heat and let it cool slightly.

Step 4

In a mixing bowl, combine the cream cheese, shredded parmesan, breadcrumbs, chopped parsley, sautéed mushroom stems and garlic, salt, and black pepper. Mix until well combined.

Step 5

Using a small spoon, stuff each mushroom cap with a generous amount of the filling, packing it in tightly.

Step 6

Place the stuffed mushroom caps on the prepared baking sheet. Drizzle them lightly with the remaining olive oil.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender, and the filling is golden on top.

Step 8

Optional: Sprinkle the tops with a pinch of paprika for a pop of color before serving.

Step 9

Serve warm as a delightful appetizer or party snack!
