Ingredients

  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 60 grams Unsalted butter, chilled and cubed
  • 150 grams Strong Scottish cheddar, grated
  • 150 milliliters Whole milk
  • 1 Egg, beaten (optional for glazing)
  • 0.25 teaspoons Smoked paprika or cayenne pepper (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the flour, baking powder, and salt.

Step 3

Rub the chilled butter into the flour mixture using your fingertips until it resembles fine breadcrumbs.

Step 4

Stir in the grated Scottish cheddar, reserving a small handful for topping the scones later.

Step 5

Gradually add the milk to the mixture, stirring with a fork or your hands until a soft but not sticky dough forms. Be careful not to overwork the dough.

Step 6

Lightly flour a surface and roll or pat the dough out to about 2-3 cm thick.

Step 7

Using a round 6 cm cutter or a glass, cut out scones and place them on the prepared baking sheet. Gently gather the remaining dough, re-roll, and cut more scones until all the dough is used.

Step 8

If desired, brush the beaten egg over the tops of the scones for a golden glaze, and sprinkle with the reserved cheese. For an extra kick, dust lightly with smoked paprika or cayenne pepper.

Step 9

Bake in the preheated oven for 15-20 minutes until the scones are well risen and golden brown.

Step 10

Cool slightly on a wire rack before serving warm with butter or enjoy them plain as a deliciously cheesy treat.
