Ingredients

  • 2 cups (crumbs) Graham crackers
  • 0.5 cups (melted) Unsalted butter
  • 0.25 cups (for crust) Granulated sugar
  • 24 ounces (softened) Cream cheese
  • 1 cups (for filling) Granulated sugar
  • 1 cups Sour cream
  • 1 teaspoons Vanilla extract
  • 3 large Eggs
  • 1 cups (for topping) Sour cream
  • 0.25 cups Powdered sugar
  • 0.5 teaspoons (for topping) Vanilla extract

Directions

Step 1

Preheat your oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.

Step 2

Prepare the crust by mixing the graham cracker crumbs, melted butter, and 1/4 cup of sugar in a medium bowl until well combined.

Step 3

Press the crust mixture into the bottom of the prepared springform pan. Use the bottom of a cup to firmly pack it down, then bake the crust for 10 minutes. Set aside to cool.

Step 4

In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Step 5

Add the sour cream and 1 teaspoon of vanilla extract to the cream cheese mixture and continue to mix until fully incorporated.

Step 6

Add the eggs, one at a time, mixing on low speed after each addition just until combined. Do not overmix to avoid incorporating too much air.

Step 7

Pour the cream cheese mixture over the cooled crust, smoothing the top with a spatula.

Step 8

Bake the cheesecake in the preheated oven for 45-50 minutes. The center should be slightly jiggly but set around the edges.

Step 9

Remove the cheesecake from the oven and let it cool at room temperature for 30 minutes, then transfer it to the refrigerator to chill for at least 4 hours or overnight.

Step 10

Prepare the sour cream topping by whisking together 1 cup of sour cream, powdered sugar, and 1/2 teaspoon of vanilla extract until smooth.

Step 11

Spread the sour cream topping evenly over the chilled cheesecake. Optionally, decorate with fresh fruit or berries.

Step 12

Slice and serve this decadent 'Creme De La Creme' cheesecake. Enjoy!
