Ingredients

  • 1 cup All-purpose flour
  • 3 tablespoons Cocoa powder
  • 2 tablespoons Granulated sugar
  • 0.25 teaspoons Salt
  • 2 large Eggs
  • 1.5 cups Milk
  • 3 tablespoons Unsalted butter (melted and cooled)
  • 1 teaspoon Vanilla extract
  • 0.5 cups Heavy whipping cream
  • 4 ounces Semisweet chocolate chips
  • 2 tablespoons Powdered sugar (for dusting)
  • 1 cup Fresh berries (e.g., strawberries, raspberries)

Directions

Step 1

In a medium mixing bowl, whisk together the flour, cocoa powder, sugar, and salt until well combined.

Step 2

In another bowl, beat the eggs lightly, then gradually whisk in the milk, melted butter, and vanilla extract.

Step 3

Slowly add the wet ingredients to the dry ingredients, whisking until the batter is smooth and lump-free. Cover and let the batter rest for 20 minutes at room temperature.

Step 4

Meanwhile, prepare the chocolate ganache by heating the heavy whipping cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth and glossy.

Step 5

Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with a small amount of butter or cooking spray.

Step 6

Pour approximately 1/4 cup of batter onto the skillet, tilting and rotating the pan to spread the batter into a thin, even layer. Cook for about 1-2 minutes, or until the edges start to curl up and the surface looks set.

Step 7

Carefully flip the crepe using a spatula and cook for 30 seconds on the other side. Remove to a plate and repeat until all the batter is used, stacking the crepes as you go.

Step 8

To assemble, spread 1-2 tablespoons of chocolate ganache onto each crepe, fold into quarters or roll up, and place on a serving plate.

Step 9

Dust the crepes with powdered sugar and top with fresh berries. Serve immediately and enjoy!
