Cut the pork shoulder and beef chuck into bite-sized cubes.
Dice the onion and mince the garlic. Slice the red bell peppers, peel and chop the carrots and potatoes into small chunks. Peel and dice the tomatoes.
In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.
Add the cubed meats to the pot and sear them until browned on all sides, about 8-10 minutes. Remove the meat and set aside.
In the same pot, add the diced onion and garlic. Sauté until translucent and fragrant, about 5 minutes.
Add the red bell peppers, carrots, and potatoes to the pot. Stir well and cook for another 5 minutes.
Stir in the diced tomatoes, paprika, ground black pepper, and salt. Cook for 3-4 minutes, allowing the flavors to meld.

Taste and adjust the seasoning with more salt and pepper if necessary.
Remove the pot from heat and discard the bay leaves. Garnish with freshly chopped parsley before serving.
