Ingredients

  • 200 grams Dark chocolate (70% cocoa or higher)
  • 300 ml Heavy cream (divided)
  • 3 large Eggs (separated, at room temperature)
  • 2 tablespoons Granulated sugar
  • 1 pinch Salt
  • 1 teaspoon Vanilla extract
  • 0 Whipped cream (optional, for garnish)
  • 0 Chocolate shavings or cocoa powder (optional, for garnish)

Directions

Step 1

Chop the dark chocolate into small pieces and place it in a heatproof bowl.

Step 2

In a small saucepan, heat 100 ml of the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Step 3

Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes to melt. Stir gently with a spatula until the chocolate is smooth and fully melted. Set aside to cool slightly.

In a clean, dry bowl, beat the egg whites with the pinch of salt using an electric mixer on medium speed until soft peaks form.
