Directions

Step 1

Pat the scallops dry with paper towels to remove excess moisture. This helps them sear properly.

Season both sides of the scallops with salt, black pepper, and paprika.

Heat a large skillet over medium-high heat and add olive oil. Once the oil is hot but not smoking, place the scallops in the pan in a single layer, leaving space between each.
