Ingredients

  • 12 ounces linguine pasta
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic

  • 1 cup Kalamata olives, pitted and halved
  • 4 cups baby spinach
  • 1 cup feta cheese, crumbled
  • 1 whole lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set aside.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Add the garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned.
