Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 3 minced garlic cloves
  • 14 ounces diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole (juiced) lime
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium heat.

Step 2

Season the chicken thighs with salt and pepper on both sides.

Step 3

Sear the chicken in the hot skillet, 2-3 minutes per side, until golden brown. Remove and set aside.

Step 4

In the same skillet, add the chopped onion and garlic. Sauté for 3-4 minutes until softened and fragrant.

Step 5

Add the diced tomatoes, chicken broth, ground cumin, chili powder, smoked paprika, dried oregano, and 1 teaspoon of salt to the skillet. Stir to combine the ingredients well.

Step 6

Return the seared chicken thighs to the skillet, nestling them into the sauce.

Step 7

Reduce the heat to low, cover, and simmer for 30-35 minutes or until the chicken is fully cooked and tender.

Step 8

Remove the chicken from the skillet and shred it with two forks. Return the shredded chicken to the skillet and stir to coat it in the sauce.

Step 9

Stir in lime juice and chopped fresh cilantro for a burst of freshness.

Step 10

Serve the chicken as a filling for tacos, burritos, or enchiladas, or pair it with rice and beans as a main dish.
