  • 1 cup diced tomatoes (canned, with juice)
  • 2 cups spinach (chopped)
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro (chopped, for garnish)
  • 2 tablespoons roasted peanuts (chopped, for garnish)

Directions

Step 1

Season the chicken thighs with salt and black pepper on all sides.
