Ingredients

  • 1 cup semolina
  • 2 medium banana
  • 2 cups milk
  • 0.25 cup sugar
  • 2 tablespoons ghee or butter
  • 0.25 cup mixed nuts (e.g., almonds, cashews, walnuts)
  • 2 tablespoons raisins
  • 0.25 teaspoon cardamom powder
  • 1 pinch salt

Directions

Step 1

Peel and slice the bananas into thin rounds. Chop the nuts into small pieces and set them aside.

Step 2

Heat 1 tablespoon of ghee or butter in a large pan over medium heat. Add the semolina and roast it for 3-4 minutes, stirring continuously, until it turns light golden and gives a nutty aroma. Remove from the pan and set aside.

Step 3

In the same pan, add the remaining 1 tablespoon of ghee or butter. Toss in the chopped nuts and raisins, and sauté for 2 minutes until the nuts are lightly golden and the raisins puff up. Remove and set aside for garnishing.

Step 4

Pour the milk into the pan and bring it to a gentle boil. Stir in the roasted semolina gradually, whisking constantly to prevent any lumps.

Step 5

Add the sugar and a pinch of salt to the mixture. Stir well until the sugar dissolves and the semolina absorbs the milk, thickening the mixture. This should take about 4-5 minutes.

Step 6

Add the cardamom powder and gently fold in the banana slices. Cook for another 2 minutes, allowing the bananas to soften slightly but not disintegrate.

Step 7

Turn off the heat and let the semolina rest for a minute. Garnish with the sautéed nuts and raisins before serving.

Step 8

Serve warm. Enjoy it as a dessert or a sweet breakfast!
