Ingredients

  • 12 oz semolina pasta (fettuccine or penne)
  • 2 pieces chicken breasts
  • 4 pieces ham slices
  • 4 pieces Swiss cheese slices
  • 0.5 cups all-purpose flour
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 pieces garlic cloves, minced
  • 0.5 cups dry white wine
  • 1.5 cups heavy cream
  • 0.5 cups Parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp breadcrumbs (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the semolina pasta according to package instructions until al dente. Drain and reserve 1/4 cup of pasta water. Set aside.

Step 2

Slice each chicken breast horizontally to create thinner fillets. Season them with salt and pepper on both sides.

Step 3

Place a slice of ham and a slice of Swiss cheese on each chicken fillet, fold them in half, and secure with toothpicks.

Step 4

Dredge each chicken piece lightly in flour, shaking off any excess.

Step 5

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the stuffed chicken and cook until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove from the skillet and set aside.

Step 6

In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for 1 minute until fragrant.

Step 7

Deglaze the skillet with the white wine, scraping the bottom of the pan to release any browned bits. Let the wine reduce by half, about 2-3 minutes.

Step 8

Lower the heat and stir in the heavy cream. Simmer gently for 2-3 minutes until slightly thickened.

Step 9

Add the grated Parmesan cheese and stir until melted and the sauce is smooth. Adjust salt and pepper to taste.

Step 10

Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add the reserved pasta water, one tablespoon at a time, until the desired consistency is reached.

Step 11

Slice the cooked chicken into bite-sized pieces and gently fold them into the pasta.

Step 12

Garnish with chopped parsley and optional breadcrumbs for a crunchy finish.

Step 13

Serve immediately and enjoy this creamy, hearty dish with your favorite wine or salad!
