Ingredients

  • 12 large Eggs
  • 0.5 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Apple cider vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Seltzer's Lebanon Bologna, finely diced
  • 2 tablespoons Sweet pickle relish
  • 1 teaspoon Paprika
  • 1 tablespoon Fresh chives, finely chopped

Directions

Step 1

Place the eggs in a single layer in a large saucepan and cover them with cold water, ensuring the water is at least 1 inch above the eggs.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan with a lid, turn off the heat, and let the eggs sit in the hot water for 10-12 minutes.

Step 3

While the eggs are cooking, prepare an ice bath by filling a large bowl with ice and cold water.

Step 4

Transfer the cooked eggs to the ice bath and let them cool completely, about 5 minutes.

Step 5

Once cooled, gently tap each egg on a hard surface to crack the shell, then peel the eggs under cool running water.

Step 6

Slice each egg in half lengthwise and carefully remove the yolks. Place the yolks in a medium mixing bowl and set the egg whites aside on a platter.

Step 7

Mash the egg yolks with a fork until crumbly. Add the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix until smooth and creamy.

Step 8

Stir in the finely diced Seltzer's Lebanon Bologna and sweet pickle relish until evenly distributed.

Step 9

Using a spoon or a piping bag fitted with a star tip, fill each egg white half with the yolk mixture.

Step 10

Sprinkle paprika over the filled eggs for added color and flavor.

Step 11

Garnish with finely chopped fresh chives for a bright, herbal touch.

Step 12

Serve immediately or refrigerate until ready to enjoy. These deviled eggs are best served chilled.
