  • 3 tablespoons lime juice
  • 100 grams brown sugar
  • 250 milliliters boiling water
  • 1 tablespoon icing sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a medium-sized baking dish (approximately 6-cup capacity).

Step 2

In a large mixing bowl, sift together the all-purpose flour, caster sugar, and baking powder.

In a separate bowl, whisk together the melted butter, milk, egg, lemon zest, and lemon juice until smooth.
