Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter
  • 3 tablespoons Granulated sugar
  • 6 tablespoons Cold water
  • 20 ounces Crushed pineapple, canned
  • 1 cup Brown sugar
  • 2 tablespoons Cornstarch
  • 0.25 teaspoons Salt
  • 1 tablespoon Lemon juice
  • 1 Egg yolk
  • 1 tablespoon Milk

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the all-purpose flour and granulated sugar. Add the cold, cubed unsalted butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Gradually add cold water, one tablespoon at a time, and mix until the dough just comes together. Divide the dough into two equal parts, shape them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

While the dough chills, prepare the filling. In a medium saucepan, add the crushed pineapple (with juice), brown sugar, cornstarch, and salt. Stir well to combine.

Step 5

Cook the pineapple mixture over medium heat, stirring constantly, until it thickens and begins to bubble. Remove from heat and stir in the lemon juice. Let the filling cool to room temperature.

Step 6

On a floured surface, roll out one of the chilled dough discs into a 12-inch circle. Carefully transfer it to a 9-inch pie dish, pressing it gently into the bottom and sides. Trim any excess dough hanging over the edges.

Step 7

Pour the cooled pineapple filling into the prepared crust.

Step 8

Roll out the second dough disc and place it over the filling. Trim and crimp the edges to seal, and cut small slits in the top to allow steam to escape.

Step 9

In a small bowl, whisk together the egg yolk and milk to make an egg wash. Brush the egg wash evenly over the top crust.

Step 10

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown.

Step 11

Remove the pie from the oven and let it cool completely before slicing and serving. Enjoy your delicious Sela's Pineapple Pie!
