Ingredients

  • 3 large ripe bananas
  • 113 grams unsalted butter, melted
  • 150 grams granulated sugar
  • 100 grams brown sugar, packed
  • 2 whole large eggs
  • 2 teaspoons vanilla extract
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 60 milliliters whole milk
  • 120 grams chopped walnuts or pecans
  • 75 grams chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 12-cup muffin tin with paper liners or grease the cups well.

Step 2

In a medium mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 3

Stir in the melted butter, granulated sugar, and brown sugar until well combined.

Step 4

Add the eggs and vanilla extract to the mixture, whisking until smooth and creamy.

Step 5

In a separate large bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.

Step 6

Gradually add the wet banana mixture to the dry ingredients, folding gently with a spatula until just combined. Do not overmix.

Step 7

Stir in the milk to loosen the batter, followed by the chopped nuts (and chocolate chips, if using). Mix until evenly distributed.

Step 8

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 9

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Remove the muffin tin from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a cooling rack.

Step 11

Serve warm or at room temperature. Enjoy your Sweet & Super Rich Banana Nut Muffins!
