Ingredients

  • 1.5 cups Warm water
  • 2 tablespoons Honey
  • 2.25 teaspoons Active dry yeast
  • 1 cup All-purpose flour
  • 1 cup Bread flour
  • 1 cup Whole wheat flour
  • 0.5 cup Rolled oats
  • 0.25 cup Sunflower seeds (unsalted, shelled)
  • 0.25 cup Pumpkin seeds (pepitas, unsalted)
  • 2 tablespoons Sesame seeds
  • 2 tablespoons Flaxseeds
  • 2 teaspoons Salt
  • 2 tablespoons Olive oil
  • 2 teaspoons Vital wheat gluten

Directions

Step 1

In a large mixing bowl, combine the warm water and honey. Stir to dissolve the honey.

Step 2

Sprinkle the active dry yeast over the water and honey mixture. Let it sit for 5-10 minutes, or until the yeast is bubbly and foamy.

Step 3

In a separate bowl, combine all-purpose flour, bread flour, whole wheat flour, rolled oats, sunflower seeds, pumpkin seeds, sesame seeds, flaxseeds, salt, and vital wheat gluten. Mix thoroughly.

Step 4

Add the olive oil to the yeast mixture. Gradually incorporate the dry ingredients into the wet ingredients, mixing with a wooden spoon or using a stand mixer with a dough hook attachment.

Step 5

Once the dough starts to come together, knead it for about 8-10 minutes on a floured surface (or continue mixing with the dough hook for 6-8 minutes) until it becomes smooth and elastic.

Step 6

Shape the dough into a ball and place it in a lightly oiled bowl, turning the dough to coat it with oil. Cover the bowl with a clean tea towel or plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Step 7

After the first rise, punch down the dough and shape it into a loaf. Place the loaf in a greased 9x5-inch loaf pan or onto a baking sheet lined with parchment paper.

Step 8

Cover the loaf loosely with a tea towel and let it rise again for 30-45 minutes, until it has risen by about 50% of its original size.

Step 9

Preheat the oven to 375°F (190°C). Once the dough has completed its second rise, bake it in the oven for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.

Step 10

Remove the bread from the oven and let it cool in the pan for 5 minutes. Then transfer it to a wire rack to cool completely before slicing and serving.
