Ingredients

  • 4 pounds Pork loin roast
  • 6 Fresh thyme sprigs
  • 4 Garlic cloves
  • 2 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1.5 tablespoons Dijon mustard
  • 1 cup Chicken broth
  • 2 tablespoons Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin roast dry with paper towels and place it on a large cutting board.

Step 3

In a small bowl, mix together the olive oil, salt, pepper, paprika, Dijon mustard, and lemon juice to form a paste.

Step 4

Rub the paste all over the surface of the pork roast, ensuring it is evenly coated.

Step 5

Peel the garlic cloves and slice them in half lengthwise. Use a small knife to create slits in the pork roast, and insert the garlic pieces into the slits.

Step 6

Set the pork in a roasting pan and arrange the thyme sprigs around and on top of the roast.

Step 7

Pour the chicken broth into the base of the roasting pan to keep the pork moist during cooking.

Step 8

Place the roasting pan in the preheated oven and cook for 1 hour and 15 minutes, or until the internal temperature of the pork reaches 145°F (63°C) using a meat thermometer.

Step 9

Baste the pork with the pan juices halfway through cooking to enhance flavor and keep it moist.

Step 10

Once cooked, remove the pork roast from the oven and let it rest for 10 minutes before slicing to allow the juices to redistribute.

Step 11

Serve the pork roast warm, garnished with additional thyme sprigs if desired, and enjoy with your favorite side dishes like roasted vegetables or mashed potatoes.
