Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cups Chicken broth (optional)

Directions

Step 1

Peel and chop the potatoes into evenly-sized chunks, roughly 1.5 inches each, to ensure even cooking.

Step 2

Place the potato chunks in a large pot and cover them with cold water. Add a generous pinch of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat, then reduce the heat to medium and cook the potatoes for 15-20 minutes, or until fork-tender.

Step 4

While the potatoes are cooking, heat the heavy cream in a small saucepan over low heat until warm. Do not boil. Set aside.

Step 5

Drain the cooked potatoes and return them to the pot. Allow them to sit for 1-2 minutes to remove excess moisture.

Step 6

Add the unsalted butter, warm heavy cream, garlic powder, onion powder, dried parsley, salt, and black pepper to the pot with the potatoes.

Step 7

Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy. Adjust the consistency, if needed, by adding a little chicken broth.

Step 8

Taste the mashed potatoes and adjust the seasoning with more salt or pepper, if needed.

Step 9

Transfer the seasoned mashed potatoes to a serving bowl. Garnish with a sprinkle of dried parsley, if desired, and serve warm.
