Ingredients

  • 500 grams shrimp (peeled and deveined)
  • 3 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic (minced)
  • 200 grams mixed salad greens
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (sliced thinly)
  • 0.25 cup red onion (thinly sliced)
  • 1 large avocado (sliced)
  • 2 tablespoons fresh dill (chopped)
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper (freshly cracked)
  • 1 teaspoon orange zest

Directions

Step 1

Rinse and pat dry the shrimp. Set aside.

Step 2

In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper to create a quick marinade.

Step 3

Pour half of the marinade over the shrimp, ensuring they are well-coated. Reserve the remaining marinade for dressing the salad.

Step 4

Preheat a skillet or grill pan over medium-high heat. Cook the shrimp for 2-3 minutes per side until they are pink, opaque, and cooked through. Remove from heat and let cool slightly.

Step 5

In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, red onion, and avocado.

Step 6

Add the cooked shrimp on top of the salad. Drizzle the reserved marinade over the salad as a dressing.

Step 7

Garnish with fresh dill and orange zest for a burst of flavor.

Step 8

Serve immediately and enjoy this fresh, seaside-inspired salad!
