Ingredients

  • 12 pieces sea scallops
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 teaspoon fresh thyme leaves
  • 2 teaspoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 cup white wine

Directions

Step 1

Pat the scallops dry with paper towels and season with half of the salt and black pepper evenly on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering.

Step 3

Carefully place the scallops in the skillet, leaving space between each one. Sear for 2-3 minutes without moving them, until a golden crust forms on the bottom.

Step 4

Flip the scallops and cook for another 2 minutes, or until the second side is golden and the scallops are opaque in the center. Remove from the skillet and set aside on a plate.

Step 5

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Mince the garlic and add it to the skillet, cooking for 30 seconds until fragrant.
