Ingredients

  • 4 pieces (6 ounces each) Salmon fillets, skin-on
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Honey
  • 1 clove Garlic, finely minced
  • 1 tablespoon Lemon juice, freshly squeezed
  • 1 tablespoon Parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the salmon fillets dry with paper towels. Season both sides with salt and freshly ground black pepper.

Step 2

Heat a large non-stick skillet over medium-high heat. Add 1 tablespoon of olive oil.

Step 3

Once the oil is hot, place the salmon fillets skin-side down in the skillet. Sear for 4 minutes without disturbing, until the skin is crispy.

Step 4

Carefully flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked to your desired level of doneness. Remove the fillets from the skillet and set aside.

Step 5

In a small bowl, whisk together the Dijon mustard, apple cider vinegar, honey, minced garlic, lemon juice, and the remaining tablespoon of olive oil. Adjust seasoning with salt and pepper to taste.

Step 6

Drizzle the mustard vinaigrette over the seared salmon fillets.

Step 7

Garnish with chopped parsley, if desired, and serve immediately. Pair with a side of roasted vegetables or a fresh green salad.
