Ingredients

  • 4 pieces Salmon fillets (skin-on)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes
  • 1 tablespoon Prepared horseradish
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 2 tablespoons Fresh parsley (chopped)
  • 1 clove Garlic (minced)

Directions

Step 1

Pat the salmon fillets dry with a paper towel and season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, place the salmon fillets skin-side down in the skillet.

Step 3

Cook the salmon for 5-6 minutes, pressing gently with a spatula to ensure the skin becomes crispy. Flip and cook for an additional 3-4 minutes, or until the salmon is just cooked through. Remove from the skillet and set aside.
