Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.
Heat a large non-stick skillet over medium-high heat. Add olive oil and swirl to coat the bottom of the pan.
Place the salmon fillets in the skillet, skin-side down if using skin-on fillets. Cook for 4-5 minutes without moving them to allow a golden crust to form.
