Ingredients

  • 4 pieces Salmon fillets, skin-on
  • 1 teaspoon Salt

  • 6 cups Baby spinach
  • 2 tablespoons Lemon juice

  • 1 teaspoon Dijon mustard

  • 1 cup Cherry tomatoes, halved
  • 2 tablespoons Extra virgin olive oil (for dressing)

Directions

Step 1

Pat the salmon fillets dry with a paper towel. Season both sides with salt and black pepper.

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat.
