Ingredients

  • 2 pieces Pork tenderloins
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 0.5 cup Blue cheese (crumbled)
  • 0.25 cup Chicken broth
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Remove any silver skin from the pork tenderloins and pat them dry with paper towels.

Step 2

Season the tenderloins evenly with salt, black pepper, and garlic powder.

Step 3

Heat olive oil in a large skillet over medium-high heat.

Step 4

Once the oil is shimmering, sear the pork tenderloins on all sides until golden brown, about 2-3 minutes per side.

Step 5

Lower the heat to medium and add 1 tablespoon of butter to the skillet. Continue cooking the pork, turning occasionally, until the internal temperature reaches 145°F (63°C), about 10-12 minutes. Remove the pork from the skillet and let it rest on a cutting board, tented with foil.

Step 6

In the same skillet, reduce the heat to low and add the remaining 1 tablespoon of butter.

Step 7

Whisk in the heavy cream and chicken broth, scraping up any browned bits from the bottom of the skillet for added flavor.

Step 8

Add the crumbled blue cheese to the sauce and stir until it is completely melted and the sauce is smooth.

Step 9

Simmer the sauce for 2-3 minutes until it thickens slightly. Remove from heat.

Step 10

Slice the rested pork tenderloins into medallions and arrange them on a serving plate.

Step 11

Drizzle the blue cheese sauce over the pork and sprinkle with chopped fresh parsley for garnish.

Step 12

Serve immediately and enjoy!
