  • 400 g penne pasta
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour

  • 1.5 cups cheddar cheese (shredded)
  • 0.5 cups parmesan cheese (grated)
  • 1 cup mozzarella cheese (shredded)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.25 tsp paprika
  • 2 cloves garlic (minced)
  • 0.5 cup panko breadcrumbs
  • 2 tbsp fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 2

In a medium saucepan, melt 3 tablespoons of butter over medium heat. Stir in the flour and cook for 1-2 minutes until the mixture is golden and no lumps remain.

Gradually pour in the milk, whisking constantly to prevent lumps. Continue stirring until the mixture thickens, about 4-5 minutes.
