Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 whole Lemon
  • 4 cloves Garlic cloves
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 sprigs Fresh rosemary or thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika

Directions

Step 1

Pat chicken breasts dry with paper towels. Using a meat mallet or rolling pin, lightly pound each breast to an even thickness of about 1/2 inch.

Step 2

Season both sides of the chicken breasts with salt, black pepper, and paprika. Set aside.

Step 3

Zest one lemon and squeeze its juice into a small bowl. Slice the second lemon thinly into rounds and set aside.

Peel and mince the garlic cloves.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts in a single layer. Cook for 4-5 minutes on one side without moving them, until golden brown.

Flip the chicken breasts and add the butter, minced garlic, fresh rosemary or thyme sprigs, and the lemon slices. Baste the chicken with the melted butter and juices using a spoon.
