Ingredients

  • 8 pieces Lamb chops
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Fresh rosemary
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Unsalted butter
  • 2 shallots Shallots, finely chopped
  • 0.5 cups Dry white wine
  • 0.25 cups Chicken or vegetable stock
  • 0.5 cups Goat cheese, crumbled
  • 0.25 cups Heavy cream
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Pat the lamb chops dry with a paper towel, then season them generously on both sides with the salt, black pepper, and fresh rosemary.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the lamb chops in a single layer, being careful not to overcrowd the pan.

Step 3

Sear the lamb chops for 3-4 minutes on each side until browned and cooked to your desired doneness. For medium-rare, aim for an internal temperature of 130°F (54°C).

Step 4

Remove the lamb chops from the skillet and set them aside on a plate, covering loosely with foil to keep warm.

Step 5

In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and chopped shallots. Sauté for 2-3 minutes until fragrant and translucent.

Step 6

Pour in the white wine, scraping the bottom of the pan with a wooden spoon to deglaze and release the browned bits for extra flavor. Let the wine simmer and reduce by half, about 3-4 minutes.

Step 7

Stir in the chicken or vegetable stock and continue to simmer for 2 minutes.

Step 8

Reduce the heat to low and whisk in the crumbled goat cheese and heavy cream. Cook for another 2-3 minutes until the sauce is smooth and slightly thickened.

Step 9

Return the lamb chops to the skillet, spooning some of the sauce over the top. Cook for an additional 1-2 minutes to warm through.

Step 10

Transfer the lamb chops to a serving platter and drizzle the goat cheese white wine reduction over them.

Step 11

Garnish with fresh parsley, if desired, and serve immediately. Enjoy!
