Ingredients

  • 4 large Vidalia onions
  • 8 oz Shrimp, peeled and deveined
  • 4 oz Lump crab meat
  • 2 cloves Garlic, minced
  • 4 tbsp Butter
  • 1 cup Panko breadcrumbs
  • 1 cup Parmesan cheese, grated
  • 2 tbsp Parsley, chopped
  • 1 tsp Lemon zest
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the outer skin from the onions and cut off a small slice from the top and bottom so they sit flat.

Step 3

Using a spoon or melon baller, hollow out the center of each onion, leaving about a 1/2-inch shell. Save the removed onion flesh for later use.

Step 4

Bring a pot of lightly salted water to a boil. Blanch the hollowed onions for 5 minutes, then carefully remove them and let them cool upside down on a towel to drain excess liquid.

Finely chop about 1/2 cup of the reserved onion flesh.

Step 6

In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.

Chop the shrimp into small pieces and add them to the skillet. Cook for 2-3 minutes until they just turn pink. Remove the skillet from the heat and fold in the lump crab meat, 1/2 cup of panko breadcrumbs, 1/2 cup of Parmesan cheese, parsley, lemon zest, salt, and pepper. Mix well to combine.

Stuff each blanched onion with the seafood mixture, packing it gently but firmly.

In a small bowl, combine the remaining 1/2 cup of panko breadcrumbs with 2 tablespoons of melted butter and the remaining 1/2 cup of Parmesan cheese. Spoon this topping onto each stuffed onion.

Drizzle the stuffed onions with olive oil and place them in a lightly greased baking dish.

Bake in the preheated oven for 30-35 minutes, or until the onions are tender and the topping is golden brown.

Remove from the oven and let cool slightly. Garnish with additional parsley if desired and serve warm.
