Ingredients

  • 4 whole Mirliton (chayote squash)
  • 4 tablespoons Butter
  • 1 medium, finely diced Yellow onion
  • 1 medium, finely diced Green bell pepper
  • 3 cloves, minced Garlic
  • 1 cup, chopped Cooked shrimp
  • 1 cup, picked through for shells Lump crabmeat
  • 1 cup Breadcrumbs
  • 0.5 cup, grated Parmesan cheese
  • 2 tablespoons, chopped Parsley
  • 2 tablespoons, chopped Green onion
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 as needed, for greasing the baking dish Olive oil or cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray and set aside.

Step 2

Wash the mirlitons and slice them in half lengthwise. Remove and discard the seeds. Place the mirliton halves in a large pot of boiling salted water and cook for 20-25 minutes until fork-tender. Drain and let cool slightly.

Step 3

Using a spoon, carefully scoop out the flesh of each mirliton half, leaving about 1/4 inch shell intact. Place the shells in the prepared baking dish and chop the scooped-out flesh into small pieces. Set aside.
