Ingredients

  • 400 g penne pasta
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 shallots, finely chopped
  • 150 ml dry white wine
  • 250 ml heavy cream
  • 250 g shrimp, peeled and deveined
  • 200 g scallops
  • 300 g mussels, cleaned and debearded
  • 50 g grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 4 liters water

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add a generous pinch of salt, then cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped shallots, and sauté for 2 minutes until fragrant.

Step 3

Increase the heat to medium-high and pour in the white wine. Let it simmer for 3-4 minutes, allowing the alcohol to cook off.

Step 4

Reduce the heat to medium and stir in the heavy cream. Season with salt, black pepper, and red pepper flakes (if using). Simmer for 2-3 minutes, stirring occasionally.

Step 5

Add the shrimp and scallops to the skillet. Cook for 3-4 minutes, turning the seafood occasionally, until the shrimp turn pink and the scallops are opaque.

Add the mussels to the skillet, cover, and let cook for 4-5 minutes, or until the mussels open. Discard any unopened mussels.

Step 7

Toss the cooked penne pasta into the skillet, along with the reserved pasta water. Mix everything together until the pasta is fully coated in the sauce.

Stir in the grated Parmesan cheese and fresh parsley. Taste and adjust seasoning, if needed.
