  • 100 g Laksa paste

  • 500 ml Chicken or fish stock
  • 200 g Prawns, peeled and deveined
  • 150 g Squid, cleaned and sliced into rings
  • 200 g Mussels, scrubbed and debearded
  • 2 tbsp Fish sauce
  • 1 tbsp Palm sugar or brown sugar
  • 2 tbsp Lime juice
  • 100 g Bean sprouts
  • 30 g Fresh coriander leaves
  • 15 g Fresh mint leaves
  • 3 Spring onions, finely sliced
  • 1 Red chili, sliced

Directions

Step 1

Soak the rice noodles in warm water for 10-15 minutes until softened. Drain and set aside.

Step 2

Heat vegetable oil in a large pot over medium heat. Add the laksa paste and cook for 2-3 minutes, stirring frequently, until fragrant.

Pour in the coconut milk and chicken or fish stock. Bring the mixture to a gentle simmer.
