Ingredients

  • 300 grams Penne pasta
  • 250 grams Cooked shrimp (peeled and deveined)
  • 200 grams Imitation crab meat
  • 200 grams Cherry tomatoes
  • 1 large Cucumber
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 3 tablespoons Fresh parsley
  • 4 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain the pasta, rinse under cold water to cool, and set aside.

Step 2

While the pasta cooks, prepare the vegetables and seafood: halve the cherry tomatoes, dice the cucumber, red bell pepper, and red onion, and roughly chop the parsley. Cut the imitation crab meat into bite-sized pieces.
