Ingredients

  • 2 cups elbow macaroni
  • 2 5-ounce cans canned tuna in water
  • 1 cup mayonnaise
  • 1 cup celery, finely chopped
  • 1 medium red bell pepper, finely diced
  • 0.5 cup red onion, finely diced
  • 1 cup frozen peas, thawed
  • 2 tablespoons dill pickle relish
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, finely chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

While the macaroni cooks, drain the canned tuna and use a fork to flake it into smaller pieces in a large mixing bowl.

Step 3

Add the mayonnaise, finely chopped celery, diced red bell pepper, diced red onion, thawed peas, dill pickle relish, and lemon juice to the bowl with the tuna. Stir until well combined.

Step 4

Season the mixture with salt and black pepper, then gently mix in the cooked and cooled macaroni until evenly coated.

Step 5

Taste the salad and adjust the seasoning with additional salt, pepper, or lemon juice as needed.

Step 6

Cover the bowl and refrigerate the salad for at least 1 hour to let the flavors meld together.

Step 7

Before serving, stir in the fresh parsley for a burst of color and freshness.

Step 8

Serve chilled as a side or a light main dish. Enjoy!
