Ingredients

  • 1 lb sea scallops
  • 2 whole roasted red peppers
  • 2 whole garlic cloves
  • 1 whole shallot
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 0.25 cup heavy cream
  • 0.25 cup chicken or vegetable broth
  • 1 tbsp lemon juice
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley

Directions

Step 1

Pat the sea scallops dry with paper towels and season both sides with 0.5 tsp of salt and 0.25 tsp of black pepper.

In a large skillet, heat 1 tbsp of olive oil and 1 tbsp of butter over medium-high heat.
