In a medium saucepan, combine the heavy cream, whole milk, and 3/4 cup of dulce de leche. Heat over medium heat, stirring occasionally, until steaming but not boiling.
In a separate medium bowl, whisk together the egg yolks and granulated sugar until pale and slightly thickened.
Slowly pour 1 cup of the hot cream mixture into the egg yolk mixture, whisking constantly to temper the yolks.
