Ingredients

  • 4 fillets (6-8 oz each) grouper fillets
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons orange juice
  • 1 lemon zest of a lemon
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 2 tablespoons parsley, chopped
  • 2 cups white rice, cooked
  • 1 teaspoon fresh thyme leaves
  • 2 stalks scallions, sliced

Directions

Step 1

Pat the grouper fillets dry with paper towels, then season both sides with paprika, ground black pepper, and 1 teaspoon of kosher salt.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, sear the grouper fillets for 3-4 minutes on one side without moving them, until browned.

Step 3

Flip the fillets and add 2 tablespoons of butter to the skillet. Cook for another 3-4 minutes, spooning the melted butter over the fillets. Remove from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the minced garlic. Cook for 30 seconds until fragrant, then deglaze with the lemon juice and orange juice.
